Naomi loves baking bread. This bread uses okara and seeds from our goldenrod plants—we also use goldenrod to make tea. The recipe is simple.
For one loaf of bread you need to mix:
2.5 cups of all-purpose flour
2 tsp of dried yeast
1 tsp of salt
1/2 cup of okara (the soy-pulp byproduct of tofu)
1/3 cup of goldenrod seeds milled in a coffee mill
1 tbsp of olive oil
Add enough water to make a soft dough—the amount of water depends on how moist the okara is. Leave the dough to rise and bake at 400°F for 30 minutes. Click on the image for a larger view.
